When making turkey carcass soup stock, remember to throw in a teaspoon of cider vinegar. It seems to draw all of the calcium out of the bones/marrow and turns the stock a bit milky but way tastier.
Joe adds:
Or oven-roast your bones before preparing stock. Same goes for beef, chicken, fish.
